Marinated London Broil with
Grilled Zucchini
Bourbon Marinated London Broil
Ingredients:
- 1-1/2 to 2 lb. London Broil 1-1/2 in thick
- 1/3-cup bourbon
- ¼ cup soy sauce
- 2 T. chopped onion
- 2 T. Balsamic vinegar
- 2 cloves minced garlic
- 2 T. extra virgin olive oil
- 2 T. sugar
- 1 T. brown mustard or whole grain mustard
- 1 t. sea salt
- 1 t. fresh ground black pepper
Directions:
- Prepare marinade by combining all the ingredients.
You can use a re-sealable plastic bag or a
glass dish.

- Blend marinade well then add the London Broil. Refrigerate for 24
hours.
- When ready to cook, turn on one burner on the grill side and one
burner on the griddle side on high for 8 minutes, and then reduce heat
to low.
- Remove meat from marinade, dry and dispose of marinade.
- Grill for approximately 20 minutes for medium rare, turning once.
- Remove meat to cutting board and allow to rest for 15 minutes to
retain juices.
- Slice against the grain and serve with zucchini
Grilled Zucchini
Ingredients:
- 2 medium zucchini’s
- Extra virgin olive oil
- Sea salt
Directions:
- Trim off zucchini tops and bottoms, then cut lengthwise in quarters.
- Brush zucchini with olive oil and dust with sea salt.
- While meat is cooking, grill zucchini on the griddle until light brown.
